Today I’m sharing my recipe for Blueberry Wildflower Muffins.
These are so easy to make, and they have a couple of very special ingredients: lemon zest and wildflower honey.
This particular honey is Savannah Bee Company’s Wildflower honey, which comes from the Okefenokee Swamp here in Georgia. This honey suits our muffin recipe perfectly with its bright richness – a nice combination when added to the zesty lemon and tart blueberries.
Let’s get started!

You’ll need:
2 cups flour
3 tsp baking powder
1/2 tsp salt
Zest of 1/2 lemon
1/2 cup butter, melted
Anywhere from 1/2 cup to 1 cup Savannah Bee Company’s Wildflower Honey (taste preference)
1 egg
1 cup milk
1 heaping cup fresh blueberries (other berries can be substituted)

1. Mix together flour, baking powder, salt, and lemon zest in a large bowl.
2. In a separate bowl, combine melted butter, Wildflower honey, egg, and milk.
3. Mix the wet ingredients into the dry ingredients, being careful not to stir too thoroughly.
5. Fold blueberries into the batter.
6. Line a muffin tin with parchment cups and fill each to the top with batter.
7. Bake at 375 degrees for 15 minutes, or until muffin tops are golden.
(Makes 12 muffins.)
